Recipe: Cacao, Almond & Chia Superfood Bar



I've fallen head over heels in love with raw energy bars, they are as delicious as they are quick and effective and with medjool dates as a base you can make many fancy flavour combinations. Packed full of natural sweetness and omega 3, this bar is great for feeding your brain with the nutrients it needs to leave you feeling great as well as combating sugar cravings. This raw date bar is packed with cacao for a boost of antioxidants, chia, almonds and cashew nuts which I've learnt are a great source of calcium, plus cacao nibs for an added crunch, and from one ex chocoholic to another, they taste better than the real deal. This is how you go about making them.

Gluten Free & Vegan
Makes 6

150g pitted medjool dates
30g almonds
20g cashews
1 tsp cacao (I use the raw chocolate company)
1 tsp chia (I use chia bia)
1 tsp cacao nibs (optional)

Pulse your cashews and almonds in a food processor until they are coarsely ground (or, use a pestle and mortar/rolling pin method). Pop your pitted dates, chia and cacao powder in the food processor and blitz for a few minutes, until the mix is thoroughly combined. Remove your date mixture and place any escaped nuts back into the mix, together with the cacao nibs. Grease a baking tray with coconut oil and pop the mix before pressing down. Pop your tray into the freezer for an hour and a half. Once frozen, remove your tray from the freezer and cut into square bars which you can then store in the fridge, or freezer until a sugar craving strikes.
